Salmorejo recipe
INGREDIENTS for 4 people
1kg ripe tomatoes - ideally Coeur de Boeuf or similar with taste
1 small red pepper
2 garlic cloves
150gr white bread (also from the day before)
150ml olive oil (don't save)
1 egg, hard-boiled and crushed
Jamon Serrano (Spanish ham), in small cubes, for decoration
PREPARATION
- Soak bread in water and soften, then squeeze out well.
- Chop the tomatoes, peppers, bread, garlic and olive oil in a blender on the highest setting. Depending on the strength of the mixer, mix for 3-5 minutes until the oil is well beaten and the color is lighter.
- Pass through a sieve.
- Serve in small bowls and decorate with the crushed egg & jamon serrano.
